Apple Cider Donut Loaf with a Cinnamon Sugar Crust

  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar
  • 1 tablespoon granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a saucepan, bring the apple cider to a boil, then reduce to a simmer until it reduces to about 1/2 cup.
  3. In a large bowl, cream together the butter and sugars until light and fluffy.
  4. Add in the eggs one at a time, mixing well after each addition.
  5. Stir in the reduced apple cider.
  6. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  8. Pour the batter into the prepared loaf pan.
  9. In a small bowl, mix the granulated sugar and cinnamon for the topping, then sprinkle it on top of the batter.
  10. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  11. Let cool before slicing and serving.

Notes

  • For an extra treat, serve with whipped cream or vanilla ice cream.
