Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
  5. Gradually combine the dry ingredients with the wet mixture until just incorporated.
  6. Fold in the diced apples.
  7. In a separate bowl, combine the oats, brown sugar, and nuts for the crumble topping.
  8. Fill the cupcake liners with the batter and sprinkle the crumble topping on top.
  9. Bake for 20-25 minutes, or until a toothpick comes out clean.
