  • 1/2 teaspoon baking powder

  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups peeled and diced apples
  • 1/4 cup sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs and vanilla extract to the mixture, and beat until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the diced apples gently.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. In a small bowl, mix together the sugar and cinnamon for the topping, then sprinkle over the batter.
  9. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  10. Allow to cool before slicing into bars and serving.

Notes

  • For a twist, add nuts or raisins to the batter.
  • These bars can also be served warm with ice cream.
