Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the top off the head of garlic and drizzle with olive oil, wrapping it in foil.
  3. Roast the garlic in the oven for about 30-35 minutes until soft.
  4. Season the bavette steak with salt and pepper.
  5. Heat a skillet over medium-high heat and sear the steak for about 5-7 minutes on each side for medium-rare.
  6. Remove the steak from the skillet and let it rest.
  7. Add the roasted garlic and beef broth to the skillet, scraping up the flavorful bits.
  8. Cook for a few minutes, then stir in the butter until melted and smooth.
  9. Slice the steak and serve with the pan sauce drizzled on top.
