  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. In another bowl, combine the milk, egg, melted butter, vanilla extract, and lemon zest.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Gently fold in the blueberries.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Bake for 10-12 minutes, or until a toothpick comes out clean.
  8. Allow to cool slightly before serving.

Notes

  • For added flavor, you can also add a tablespoon of lemon juice to the batter.
