  • 1 cup grated carrots
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup sour cream
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, sugars, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the butter, eggs, sour cream, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the grated carrots.
  6. Roll out the dough and spread cinnamon sugar filling.
  7. Roll tightly and cut into rolls.
  8. Place in a baking dish and bake for 25-30 minutes.
  9. Allow to cool before drizzling with cream cheese frosting.

Notes

  • For extra flavor, add chopped walnuts or raisins to the filling.
  • These rolls are best served warm.
