- 2 cups all-purpose flour
- 1 cup grated carrots
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup sour cream
- 2 teaspoons ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the flour, sugars, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the butter, eggs, sour cream, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the grated carrots.
- Roll out the dough and spread cinnamon sugar filling.
- Roll tightly and cut into rolls.
