Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, beat together the pumpkin puree, brown sugar, granulated sugar, and butter until smooth.
  3. Add in the maple syrup and egg, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until edges are golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
