  • 1 cup sour cream
  • 1 cup cream of chicken soup
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup green onions, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine chicken, garlic powder, onion powder, salt, pepper, and half of the cheese.
  3. Spread a spoonful of sour cream mixture on each tortilla, add a portion of the chicken mixture, and roll up.
  4. Place rolled tortillas in a greased baking dish.
  5. Mix remaining sour cream and cream of chicken soup, and pour over the enchiladas.
  6. Sprinkle with remaining cheese.
  7. Bake for 25-30 minutes until bubbly and golden.

Notes

  • For extra flavor, add diced jalapeños to the chicken mixture.
  • Serve with salsa or guacamole on the side.
