  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup peas
  • 2 cups cooked chicken, shredded
  • 2 cups cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • salt to taste
  • pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, cook turkey bacon until crispy. Remove and crumble.
  3. Add olive oil to the skillet, then sauté onion and garlic until translucent.
  4. Add carrots and peas, cooking until tender.
  5. Stir in shredded chicken, cream of chicken soup, and chicken broth. Mix well.
  6. Add cooked pasta and herbs, stirring until combined and heated through.
  7. Season with salt and pepper. Serve topped with crumbled turkey bacon.
