  • 2 cups diced potatoes
  • 4 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 2 tablespoons cornstarch
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat and add the chopped turkey bacon. Cook until crispy.
  2. Add the diced onion and minced garlic; sauté until onion is translucent.
  3. Stir in the carrots and potatoes, cooking for about 5 minutes.
  4. Add the chicken broth, shredded chicken, thyme, salt, and black pepper. Bring to a simmer.
  5. Stir in the frozen peas and heavy cream, then simmer for another 10 minutes.
  6. Mix cornstarch with a little water to create a slurry, then stir into the pot to thicken the soup.
  7. Cook for an additional 2-3 minutes until the soup reaches the desired consistency.
