Cozy Roasted Poblano Soup

  • 4 roasted poblano peppers
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/4 cup cilantro, chopped

Instructions

  1. Roast the poblano peppers until charred. Let them cool, then peel and chop.
  2. In a pot, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  3. Add the chopped poblano peppers, vegetable broth, cumin, salt, and black pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Blend the soup until smooth. Stir in heavy cream and heat through.
  6. Garnish with cilantro before serving.
