- 4 large poblano peppers
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt to taste
- Black pepper to taste
- Fresh cilantro for garnish
- Preheat the oven to 400°F (200°C).
- Roast the poblano peppers on a baking sheet for 20-25 minutes until charred.
- Once roasted, place the peppers in a bowl and cover to steam for about 10 minutes.
- After steaming, peel the skins off the poblanos and remove the seeds.
- In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sauté until soft.
- Add the roasted peppers, vegetable broth, and cumin. Bring to a boil.
- Reduce heat and let it simmer for 15 minutes.
- Blend the soup until smooth, then stir in heavy cream.
