  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth

  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roast the poblano peppers on a baking sheet for 20-25 minutes until charred.
  3. Once roasted, place the peppers in a bowl and cover to steam for about 10 minutes.
  4. After steaming, peel the skins off the poblanos and remove the seeds.
  5. In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sauté until soft.
  6. Add the roasted peppers, vegetable broth, and cumin. Bring to a boil.
  7. Reduce heat and let it simmer for 15 minutes.
  8. Blend the soup until smooth, then stir in heavy cream.
  9. Season with salt and pepper to taste.
  10. Serve hot, garnished with fresh cilantro.

  • For a spicier soup, leave some seeds in the poblanos.
