Deliciously crispy chicken with a dill pickle and parmesan crust that’s easy to make and irresistible!

  • 2 pounds chicken breasts
  • 1 cup dill pickle juice
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon dried dill
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup all-purpose flour
  • 2 eggs

Instructions

  1. Marinate the chicken breasts in dill pickle juice for at least 30 minutes.
  2. Preheat the oven to 400°F (200°C).
  3. In a bowl, mix breadcrumbs, parmesan, garlic powder, onion powder, dried dill, salt, and pepper.
  4. Set up a dredging station with flour, beaten eggs, and the breadcrumb mixture.
  5. Coat each chicken breast in flour, dip in egg, and then press into the breadcrumb mixture.
  6. Place coated chicken on a baking sheet and bake for 25-30 minutes until golden and cooked through.

Notes

  • For extra crispiness, broil for the last few minutes.
  • Serve with extra dill pickles on the side.
