  • 1 pound boneless skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup diced tomatoes
  • 2 cups spinach
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crock pot.
  2. Add the chicken broth, diced tomatoes, garlic, and Italian seasoning.
  3. Cook on low for 6-8 hours or high for 4 hours.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Stir in the heavy cream, Parmesan cheese, and spinach. Cook for an additional 30 minutes.
  6. Season with salt and pepper before serving.
