Crockpot Chicken and Rice Soup

This Crockpot Chicken and Rice Soup is the perfect comfort food for busy nights, packed with flavor and easy to prepare.

Ingredients

  • 1 pound chicken breast
  • 1 cup long-grain rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup frozen peas
  • 2 tablespoons olive oil

Instructions

  1. Add olive oil to the crockpot and place chicken breast at the bottom.
  2. Layer in the rice, followed by chicken broth, carrots, celery, onion, garlic, thyme, black pepper, and salt.
  3. Cook on low for 6-8 hours, or on high for 3-4 hours, until chicken is cooked through.
  4. In the last 30 minutes of cooking, add the frozen peas.
  5. Shred the chicken in the soup before serving.

Notes

  • For a creamier soup, add a splash of cream before serving.
  • Feel free to add other vegetables based on your preference.
