Crockpot Chicken Corn Chowder

  • 1 pound chicken breast
  • 4 slices turkey bacon
  • 2 cups corn kernels
  • 1 cup diced potatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook turkey bacon in a skillet until crispy, then crumble and set aside.
  2. In the crockpot, add chicken breast, corn, potatoes, onion, and garlic.
  3. Pour in chicken broth and season with salt, pepper, and thyme.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. Shred the chicken and add in the heavy cream.
  6. Cook for an additional 30 minutes on high.
  7. Top with crumbled turkey bacon and fresh parsley before serving.

Notes

  • For a thinner chowder, add more chicken broth.
  • Feel free to add other vegetables like bell peppers or carrots.
