Crockpot Vegetarian Tortilla Soup

A hearty and flavorful vegetarian tortilla soup that’s easy to prepare in a crockpot, perfect for cozy dinners.

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 4 cups vegetable broth
  • 1 bell pepper, diced
  • 1 cup zucchini, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a skillet, heat the olive oil over medium heat and sauté the onion and garlic until soft.
  2. Add the cumin and chili powder, cooking for another minute.
  3. Transfer the mixture to the crockpot. Add the tomatoes, black beans, corn, vegetable broth, bell pepper, zucchini, salt, and black pepper.
  4. Stir to combine and cover. Cook on low for 6-8 hours or on high for 3-4 hours.
  5. Before serving, stir in the lime juice and cilantro.

Notes

  • For extra heat, add diced jalapeños or a dash of hot sauce.
  • Serve with tortilla strips for added crunch.
