- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 4 cups vegetable broth
- 1 bell pepper, diced
- 1 cup zucchini, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- In a skillet, heat the olive oil over medium heat and sauté the onion and garlic until soft.
- Add the cumin and chili powder, cooking for another minute.
- Transfer the mixture to the crockpot. Add the tomatoes, black beans, corn, vegetable broth, bell pepper, zucchini, salt, and black pepper.
- Stir to combine and cover. Cook on low for 6-8 hours or on high for 3-4 hours.
- Before serving, stir in the lime juice and cilantro.
