Dump-and-Bake Chicken Tzatziki Rice

  • 1 pound boneless chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup tzatziki sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, combine the rice, chicken broth, tzatziki sauce, garlic powder, onion powder, salt, and pepper.
  3. Place the chicken breasts on top of the rice mixture.
  4. Cover the baking dish with aluminum foil and bake for 40-45 minutes.
  5. Remove the foil, add cherry tomatoes and feta cheese, and return to the oven for an additional 10 minutes.
  6. Let it cool for a few minutes before serving.
