  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 3 cups egg noodles
  • 1 cup frozen peas
  • 2 tablespoons lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté until tender.
  3. Stir in garlic and cook for 1 minute.
  4. Add chicken broth and bring to a boil.
  5. Add chicken breasts, thyme, parsley, and black pepper.
  6. Reduce heat and simmer for 20 minutes.
  7. Remove chicken, shred it, and return it to the pot.
  8. Add egg noodles and peas, and cook until noodles are tender.
  9. Stir in lemon juice before serving.
