Easy Thai Coconut Curry Dumpling Soup

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 tablespoon soy sauce
  • 1 bell pepper, sliced
  • 2 cups baby spinach
  • 12 dumplings (fresh or frozen)
  • 1 tablespoon lime juice
  • 2 green onions, sliced

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onion, garlic, and ginger, cooking until fragrant.
  3. Stir in the red curry paste and cook for another minute.
  4. Pour in the vegetable broth and coconut milk, bringing to a simmer.
  5. Add the soy sauce, bell pepper, and dumplings, cooking until the dumplings are done.
  6. Stir in the baby spinach and cook until wilted.
  7. Remove from heat and add lime juice.
  8. Serve hot, garnishing with green onions.
