Easy Thai Coconut Curry Dumpling Soup

  • 1 tablespoon vegetable oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 tablespoons red curry paste
  • 1 can (400ml) coconut milk
  • 4 cups vegetable broth
  • 2 cups dumplings
  • 1 tablespoon soy sauce
  • 1 teaspoon lime juice
  • 1 cup spinach
  • cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Stir in the garlic and ginger, cooking for one more minute.
  4. Add the red curry paste and cook for another minute until fragrant.
  5. Pour in the coconut milk and vegetable broth, stirring to combine.
  6. Bring the mixture to a simmer, then add the dumplings.
  7. Cook according to the dumpling package instructions.
  8. Add soy sauce, lime juice, and spinach, cooking until the spinach wilts.
  9. Serve hot, garnished with cilantro.
