Elote Deviled Eggs

Enjoy a delicious twist on a classic with these Elote Deviled Eggs, featuring turkey bacon for added flavor!

Ingredients

  • 6 large eggs
  • 2 tablespoons mayonnaise
  • 1 tablespoon sour cream
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder
  • 2 slices turkey bacon, cooked and crumbled
  • 1/4 cup corn, grilled or roasted
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Hard boil the eggs, cool, and peel.
  2. Slice the eggs in half and scoop out the yolks into a bowl.
  3. Add mayonnaise, sour cream, lime juice, chili powder, and mix until smooth.
  4. Fold in crumbled turkey bacon, corn, and cilantro.
  5. Pipe or spoon the mixture back into the egg whites.
  6. Garnish with additional chili powder and cilantro if desired.

Notes

  • For extra flavor, consider adding cotija cheese on top.
  • These can be made a day in advance for convenience.
