Fresh Apple Cake with Dreamy Cream Cheese Frosting

  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups peeled and chopped fresh apples
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together sugars and oil until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Gradually add the dry ingredients to the wet mixture and stir until combined.
  6. Fold in the apples and vanilla extract.
  7. Pour the batter into a greased bundt pan and bake for 50-60 minutes.
  8. While the cake cools, prepare the frosting by beating cream cheese and butter until smooth.
  9. Gradually add powdered sugar and vanilla extract, mixing until creamy.
  10. Once the cake is cool, frost with cream cheese frosting.

Notes

  • For best results, let the cake cool completely before frosting.
  • This cake can be made a day in advance.
