  • 1 teaspoon vanilla extract
  • 3 cups peeled and chopped apples
  • 1 cup chopped walnuts (optional)
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture until just combined. Fold in chopped apples and walnuts if using.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 40-45 minutes or until a toothpick comes out clean.
  7. While the cake is baking, prepare the frosting by beating together cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, and mix until creamy.
  8. Allow the cake to cool completely before frosting it with the cream cheese frosting.
