Ginger Lime Pork with Coconut Rice

A delicious combination of ginger lime pork served over fluffy coconut rice.

Ingredients

  • 2 pounds pork tenderloin
  • 3 tablespoons fresh ginger, grated
  • 4 cloves garlic, minced
  • 1/4 cup lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon black pepper
  • 2 cups jasmine rice
  • 1 can coconut milk (13.5 oz)
  • 1 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Marinate the pork in ginger, garlic, lime juice, soy sauce, honey, and black pepper for at least 1 hour.
  2. In a pot, combine jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat and simmer until rice is fluffy.
  3. Grill or roast marinated pork until cooked through. Let it rest before slicing.
  4. Serve pork over coconut rice and garnish with fresh cilantro.

Notes

  • For extra flavor, let the pork marinate overnight.
  • Adjust sweetness with more honey if desired.
