- 1 cup gluten-free rolled oats
- 1/2 cup almond flour
- 1/2 cup brown sugar
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together pumpkin puree, brown sugar, and melted coconut oil.
- Add vanilla extract and mix well.
- In another bowl, combine gluten-free rolled oats, almond flour, baking soda, cinnamon, nutmeg, and salt.
