Gordon Ramsay Sticky Toffee Pudding

A classic dessert recipe featuring moist sponge cake and rich toffee sauce.

Ingredients

  • 200g pitted dates
  • 250ml boiling water
  • 75g unsalted butter
  • 150g brown sugar
  • 2 large eggs
  • 200g self-raising flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Soak the dates in boiling water for 15 minutes, then mash until smooth.
  3. Cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing thoroughly.
  5. Fold in the flour, baking powder, and vanilla extract.
  6. Add the date mixture and combine well.
  7. Pour into greased baking dish and bake for 30-35 minutes.
  8. For the sauce, heat butter and sugar until melted and thickened. Pour over warm pudding before serving.

Notes

  • Serve with vanilla ice cream or custard for extra indulgence.
  • Can be made a day in advance and reheated before serving.
