Healthy Pumpkin Chocolate Chip Cookies

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup coconut oil
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together pumpkin puree, coconut oil, brown sugar, eggs, and vanilla extract until well combined.
  3. In a separate bowl, whisk together whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips.
  6. Drop rounded tablespoons of dough onto a lined baking sheet.
  7. Bake for 10-12 minutes or until edges are lightly golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

  • For added flavor, consider adding walnuts or pecans into the mix.
  • These cookies can be made vegan by substituting eggs with flax eggs.
