  • 4 large sweet potatoes
  • 1 cup cranberries
  • 1 cup diced apples
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and pierce them with a fork. Bake for 45-60 minutes until tender.
  3. Let the sweet potatoes cool, then cut them in half and scoop out the flesh.
  4. In a bowl, mix the sweet potato flesh with cranberries, diced apples, brown sugar, butter, cinnamon, nutmeg, and salt.
  5. Fill the sweet potato skins with the mixture and return to the oven.
  6. Bake for an additional 20 minutes until heated through.
