- 4 large sweet potatoes
- 1 cup cranberries
- 1 cup diced apples
- 1/2 cup brown sugar
- 1/4 cup butter
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and pierce them with a fork. Bake for 45-60 minutes until tender.
- Let the sweet potatoes cool, then cut them in half and scoop out the flesh.
- In a bowl, mix the sweet potato flesh with cranberries, diced apples, brown sugar, butter, cinnamon, nutmeg, and salt.
- Fill the sweet potato skins with the mixture and return to the oven.
- Bake for an additional 20 minutes until heated through.
