Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon oregano
  • 1 cup small pasta
  • Salt and pepper to taste
  • 1 cup fresh spinach

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until soft.
  3. Stir in the carrots and celery, cooking for about 5 minutes.
  4. Pour in the vegetable broth and diced tomatoes.
  5. Add the dried basil and oregano, then bring to a boil.
  6. Reduce the heat and let it simmer for 20 minutes.
  7. Add the pasta and cook until al dente.
  8. Stir in the fresh spinach just before serving.
  9. Season with salt and pepper to taste.
