Lemon Ginger Turmeric Chicken and Rice Soup

A delightful and nutritious soup that combines the bright flavors of lemon, ginger, and turmeric with tender chicken and rice.

Ingredients

  • 1 pound chicken thighs
  • 1 cup brown rice
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons turmeric powder
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 6 cups chicken broth
  • 2 tablespoons olive oil
  • 1 cup carrots, diced
  • 2 cups spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  2. Add chicken thighs, ginger, turmeric, and cook until the chicken is browned.
  3. Pour in chicken broth and bring to a boil.
  4. Add brown rice and carrots, lower heat and simmer for 30 minutes.
  5. Stir in spinach and lemon juice, season with salt and pepper.
  6. Cook for an additional 5 minutes until spinach is wilted.
  7. Serve hot, garnished with fresh herbs if desired.

Notes

  • For a vegetarian option, substitute chicken with lentils.
  • Can add other vegetables like celery or bell peppers for extra flavor.
