Loaded Cheddar Ranch Beef and Sweet Corn Rotini Bake

A delicious and hearty dish combining flavors of ranch and cheddar with tender beef and sweet corn, all baked to perfection.

Ingredients

  • 1 pound ground beef
  • 8 ounces rotini pasta
  • 1 cup sweet corn, frozen or canned
  • 1 cup cheddar cheese, shredded
  • 1 packet ranch seasoning
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and sauté the ground beef until browned.
  3. Drain excess fat, then stir in ranch seasoning and black pepper.
  4. Add beef broth, sweet corn, and rotini pasta; bring to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes until pasta is al dente.
  6. Stir in half of the cheddar cheese until melted.
  7. Transfer the mixture to a baking dish and top with remaining cheddar cheese.
  8. Bake in the preheated oven for 20 minutes until cheese is bubbly and golden.

Notes

  • For a spicy kick, consider adding diced jalapeños.
  • Can be made ahead and refrigerated before baking.
