Mango Sticky Rice

Mango Sticky Rice is a traditional Thai dessert that combines sweet sticky rice with ripe mango and a drizzle of coconut sauce. It’s a delightful dessert that is loved by many.

  • 1 cup sticky rice
  • 2 ripe mangoes
  • 1 cup coconut milk
  • ½ cup sugar
  • ¼ teaspoon salt
  • 1 tablespoon sesame seeds

Instructions

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the rice and steam it in a steamer lined with cheesecloth for about 30-40 minutes until tender.
  3. While the rice is cooking, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar is dissolved, then set aside.
  4. Once the rice is cooked, transfer it to a bowl and pour about ¾ of the coconut milk mixture over it. Stir to combine and let it sit for 15 minutes to absorb the flavors.
  5. Peel and slice the mangoes into thin pieces.
  6. To serve, place a portion of the sticky rice on a plate, top with mango slices, and drizzle with the remaining coconut milk sauce. Sprinkle with sesame seeds if desired.

Notes

  • For extra flavor, you can add a splash of vanilla to the coconut milk sauce.
  • Make sure the mangoes are ripe for the best flavor.
