Ingredients

  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup turkey bacon, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste
  • 1 cup heavy cream
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, carrots, celery, and garlic, and sauté until softened.
  3. Stir in the turkey bacon and cook until crispy.
  4. Add chicken broth, cooked chicken, thyme, basil, and bay leaf; bring to a simmer.
  5. Season with salt and pepper, then stir in the heavy cream.
  6. Simmer for an additional 10 minutes, then remove bay leaf before serving.

Notes

  • For a thicker soup, you can add cornstarch or flour.
  • Use leftover turkey or rotisserie chicken for convenience.
