Mexican Beef and Vegetable Soup

  • 1 pound ground beef
  • 2 cups diced tomatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup corn
  • 2 cups spinach
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onions and garlic; sauté until the onions are translucent.
  3. Add the ground beef and cook until browned.
  4. Stir in the diced tomatoes, carrots, celery, and corn.
  5. Pour in the beef broth and season with chili powder, cumin, salt, and black pepper.
  6. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.
  7. In the last 5 minutes, add the spinach and cook until wilted.
  8. Serve hot and enjoy!

Notes

  • This soup can be made in advance and stored in the refrigerator.
  • Feel free to add other vegetables as desired.
