  • 8 ounces pasta of choice
  • 4 strips turkey bacon
  • 2 cups corn, grilled or canned
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup cotija cheese, crumbled
  • 2 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1/2 teaspoon salt

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
  3. In a large bowl, combine the cooled pasta, corn, bell pepper, avocado, cilantro, and cotija cheese.
  4. Add the bacon pieces to the salad.
  5. In a separate bowl, whisk together the lime juice, chili powder, and salt.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes
