Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roast the poblano peppers in the oven until the skin is blistered and blackened.
  3. Let the peppers cool, then peel off the skin and remove the seeds.
  4. In a pot, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
  5. Add the roasted peppers, vegetable broth, and cumin.
