2 tablespoons olive oil
1 cup diced onion
2 cloves garlic, minced
2 cups diced potatoes
4 cups chicken broth
1 pound cooked chicken, shredded
1 cup heavy cream
1 package gnocchi (about 16 ounces)
2 cups spinach
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon nutmeg
¼ cup grated Parmesan cheese
Instructions
In a large pot, heat olive oil over medium heat.
Add diced onions and garlic; sauté until soft.
Stir in diced potatoes and chicken broth; bring to a boil.
Reduce heat, add shredded chicken and simmer until potatoes are tender.
Stir in heavy cream and gnocchi; cook for an additional 5-7 minutes.
Add spinach, salt, pepper, and nutmeg; cook until spinach is wilted.
