One Pot Broccoli Cheese Orzo

A simple and delicious one pot recipe combining broccoli and cheese with orzo.

Ingredients

  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add broccoli florets and sauté for 2-3 minutes.
  3. Stir in the orzo, garlic powder, salt, and black pepper.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is cooked.
  6. Remove from heat and stir in the cheddar cheese until melted.
