Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, sugar, oil, eggs, and vanilla until well combined.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. If desired, fold in chopped nuts.
  5. Pour the batter into a greased loaf pan and bake for 60-70 minutes, or until a toothpick comes out clean.
