  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Add the pumpkin puree and vanilla extract, mixing well.
  4. In another bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Let cool completely before frosting.
  9. For the frosting, beat the softened cream cheese until smooth, then gradually add powdered sugar until well combined.
  10. Frost the cookies once they are cooled.

Notes

  • For added flavor, you can sprinkle some cinnamon on top of the frosting.
  • These cookies can be refrigerated for a few days.
