Pumpkin Curry with Chickpeas and Coconut

  • 2 cups pumpkin, cubed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (13.5 oz) coconut milk
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground ginger
  • 2 tablespoons olive oil
  • 1 cup vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic; sauté until soft.
  2. Stir in curry powder and ginger; cook for another minute.
  3. Add pumpkin, chickpeas, coconut milk, and vegetable broth; bring to a simmer.
  4. Cover and cook for about 20 minutes, or until the pumpkin is tender.
  5. Season with salt and pepper to taste.
  6. Serve warm, garnished with fresh herbs if desired.
