  2. In a saucepan, combine the pumpkin puree, cream, and sugar; heat over medium until sugar dissolves.
  3. In a bowl, whisk egg yolks, then slowly add the warm mixture to temper the eggs.
  4. Stir in vanilla and pumpkin pie spice.
  5. Pour the mixture into ramekins and place them in a baking dish.
  6. Fill the baking dish with hot water halfway up the sides of the ramekins.
