  • 3 large egg yolks

  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. In a saucepan, combine pumpkin puree, heavy cream, sugar, and spices. Heat over medium heat until hot.
  2. In a bowl, whisk egg yolks. Slowly add hot cream mixture to eggs, whisking constantly.
  3. Return the mixture to the saucepan and cook over low heat until it thickens.
  4. Pour into ramekins and chill in the refrigerator for at least 4 hours.
