  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  • 1/2 cup brown sugar
  • 1/4 cup melted butter
  • 1/2 cup oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the pumpkin puree, oil, and sugar until well combined.
  3. Add the eggs one at a time, beating well after each addition.
  4. In a separate bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the walnuts and pour the batter into a greased loaf pan.
  7. In a small bowl, combine the brown sugar, melted butter, and oats to make the streusel topping.
  8. Sprinkle the streusel evenly over the top of the batter.
  9. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  10. Let it cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

  • For a sweeter bread, you can add more sugar to the batter.
  • Try adding chocolate chips for an extra treat!
