- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 1 cup sugar
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
- 1/2 cup brown sugar
- 1/4 cup melted butter
- 1/2 cup oats
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the pumpkin puree, oil, and sugar until well combined.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the walnuts and pour the batter into a greased loaf pan.
- In a small bowl, combine the brown sugar, melted butter, and oats to make the streusel topping.
- Sprinkle the streusel evenly over the top of the batter.
- Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring it to a wire rack.
