  • 1 cup baby spinach
  • 1 cup dumplings (frozen or homemade)
  • 2 tablespoons lime juice
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Stir in the red curry paste and cook, stirring for about 2 minutes.
  4. Pour in the vegetable broth and coconut milk. Bring to a gentle simmer.
  5. Add the dumplings and cook according to package instructions.
  6. Once the dumplings are cooked, stir in the baby spinach and lime juice. Season with salt to taste.
  7. Serve hot, garnished with fresh cilantro.
