A delightful and healthy Quinoa Apple Salad that combines fresh ingredients for a fruity explosion of flavor.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 apple, diced
  • 1/2 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water, bring to a boil, then cover and simmer for 15 minutes until water is absorbed.
  3. Remove from heat and let sit for 5 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine the quinoa, apple, walnuts, and cranberries.
  6. In a small bowl, whisk together honey, lemon juice, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve chilled or at room temperature.
