16 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract (for cheesecake layer)
Instructions
Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
In a large bowl, combine the flour, sugar, cocoa powder, baking soda, and salt.
In another bowl, whisk together the buttermilk, oil, eggs, food coloring, and vanilla extract.
Mix the wet ingredients into the dry ingredients until just combined.
Add the vinegar and mix until smooth.
Divide the batter evenly among the prepared cake pans.
Bake for 25-30 minutes or until a toothpick comes out clean.
While the cakes are cooling, prepare the cheesecake layer by mixing the cream cheese, powdered sugar, and vanilla extract until smooth.
Once the cakes are completely cool, layer them with the cheesecake mixture in between each layer.
Top the final layer with cream cheese frosting if desired, and serve.
Notes
For extra flavor, consider adding a teaspoon of almond extract to the cake batter.
