  • 3 large eggs

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup sugar (for the swirl)
  • 1 teaspoon ground cinnamon (for the swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease mini loaf pans.
  2. In a mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Mix well.
  3. Add eggs one at a time, mixing after each addition.
  4. In another bowl, whisk together flour, baking soda, baking powder, ground cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients.
  6. In a small bowl, mix together the swirl sugar and cinnamon.
  7. Pour half of the batter into the prepared pans, then sprinkle with the cinnamon swirl mixture. Pour the remaining batter over the top.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let cool before removing from the pans.
