Sopa de Ajo

A comforting and easy-to-make garlic soup that warms up chilly nights.

Ingredients

  • 6 cloves garlic
  • 4 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 2 eggs
  • 4 slices stale bread
  • 2 tablespoons olive oil
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped garlic and sauté until fragrant.
  2. Stir in the smoked paprika and cook for another minute.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the bread and let it soak for a few minutes.
  5. Crack the eggs into the soup, stirring gently until they are cooked.
  6. Season with salt to taste and serve hot, garnished with fresh parsley.

Notes

  • For a richer flavor, you can use chicken broth instead of vegetable broth.
  • Feel free to add in some cooked chicken for extra protein.
